first Laguioles had
handles,
made out of bone
or
deer antler, readily available
some
200 years ago.
When
the Aubrac Cows
arrived
in the region, horn became
available
to the "couteliers", artisan
knife
masters. The rarer tip of horn
has
more refined coloring and fibers,
and
displays more durability than
the
hollow part of the pressed horn
